FOOD INSPIRATION / BRAIDED PIZZA








Braided pizza with three tomatoes, two cheese and coppa
English Recipe:


Ingredients:
For the pizza dough: 250g flour - 12 cl water - 1/4 tsp dry yeast - salt

For the filling: 2 Tbsp concentrated tomato puree - 6 cherry tomatoes - 3 pieces of sundried tomatoes - 1 ball Mozzarella cheese - grated Parmesan cheese - about 10 slices coppa, very thin - 20 basil leaves or so - a good pinch fennel seeds - 1 egg yolk - salt & pepper

* Start making the pizza dough.Dissolve the yeast in the water and set aside for about 10 minutes at room temperature. Pour in the bowl of a mixer, hook on.Add the flour and 2 to 3 large pinches of salt. Turn the mixer on low speed for 10 minutes. The dough should be elastic and unstick easily from the bowl.

* Make a ball with this dough, place it in a large bowl, slightly brushed with oil. Cover with a tea towel and set aside for at least 2 hours, at room temperature. Roll out the dough into an oval shape, as seen in the first picture.

* Cut the sides, leaving about a third free in the middle. Again, take a look at the picture.
Prepare the filling. Start draining the mozzarella cheese properly in order not to end up with soggy pizza. Then, tear it or slice it and drain again. To really drain mozzarella, wrap it in paper towel and squeeze well.

* Halve the cherry tomatoes and crush them with your fingers to get rid of the seeds and extra juice.
Roughly chop the sundried tomatoes. Roughly tear the coppa. 

* Spread this filling in the middle of the pizza dough, lengthwise.

* Start with the tomato puree, then the mozzarella, the sundried tomatoes, cherry tomatoes, coppa, basil, fennel seeds, Parmesan cheese to your taste, and some salt and pepper.

* Close the pizza by bringing the little pieces of dough in the center, making them cross one another, as if you were braiding. Take a look at the second picture, this time.Brush with the egg yolk beaten with a dash of water.

* Place on a baking sheet, lined with parchment paper and put in the oven, preheated at 210°C/410°F, for about 20 minutes. Do not hesitate to cook for a bit longer if you see the dough is not cook through.

* Take the pizza out of the oven, place it on a serving board, cut it and serve immediately!
